Composted horse manure is also great. Less rich than cow manure, the bigger particles makes a nice addition to clay soil. (Of course, the real reason I prefer it may be that it's less smelly and easier to obtain around here than cow manure.)

But I stopped using any kind of manure in my vegetable beds after importing a nasty disease that wiped out all my tomatoes and peppers. So do be careful.
