Have you considered taking a "care package" of your fresh picked veggies to some of the chefs at the nicer restaurants in your area?

Alice Waters of Chez Panisse has arrangements with local farmers to purchase what they grow. If you have unusual items, it might be worth your while to give this a try and cut down the number of days you have to set up and break down your stand.

If you get a hold of the book "The Small Commercial Garden" by Dan Haakenson; he has a great plan. It is designed to carry on your p/u and then on the ground for your sell with every thing you need. Astand for your scale and bags,an umbrella mount, joist hangers,a cash box, and multi level sheleves, it even has a corner stand so all space is used.
