I have been hesitant to answer because I am not completely positive I have this plant, but I have convinced myself that I am 95% sure so . . .

Because of the dense growth pattern of Heather Bun, I suspect that regrowth will be adequate, and depending on the original size of the plant, I would guess they will be back to normal in, say, 3-4 years. Of course, the resultant plant will be more squat than normal, but due to the very full and uniform growth of this cultivar, sheering won't change the natural form much. If you would like to trim the outer sides to return to a bit more uprightness, this is one of the few times I would actually recommend such a practice. (I tend to be a purist.) But you can only trim back to as far back as there is still green.

Thank you. I am hesitant to sheer much of them, I cleaned up the dead areas as nothing will result from dead foliage, and I may try to clean up the shape a tad. I don't mind if they are a bit squat, as long as it doesn't look like I tried to give them flat tops with the hedge clippers. Next year I will have to give them a chicken wire barrier.
