Kale and mustard - pull it now or leave it?

The marubah santoh that was supposed to be bolt resistant has bolted in 90-degree heat, the tatsoi is too so we will be stirfrying the flower stalks tonight with our ponzu chicken. The Russian kale and green wave mustard are huge - should I pull them all (maybe take them to market next week if I can keep them cool, make kale chips?) and start new for fall crops (or maybe plant something else since I don't know if anyone around here eats this stuff - mustard is too spicy for Yankee tastes)? Or will it keep until cooler weather when people might want kale again (or we'll start eating more in soups etc.)?

Kale keeps all year. I think mustard does too. But definitely start some brassica greens for fall regardless.

Should I chop the oldest (largest) leaves off the kale? It doesn't seem to be putting out too many new leaves and old ones are drooping (and bleaching out?) in the sun. Mustard looks good, but may be getting too spicy in the heat. I'm definitely going to pull the tatsoi and bok choy to plant new.

Might be about time to start new seed inside for transplanting in Aug? If I pull everything out of the beds they're in now (maybe leave the kale in the back/north after cutting it back), I can add compost for a N boost too.
