Location sounds good for maples.
Aoyagi is green leaf, which I think colors yellow.
Seiryu is cut leaf green which colors red.
I've got these in my yard.
Beni kawa is red cut leaf and stays small I think.
Sango kaku will get the tallest.
Pruning to control height of a japanese maple is not something you want to have to do very often. It is better to choose varieties that will only grow as tall as you want them to be.
Another variety I like is Butterfly...very nice in shady conditions...green/yellow variegated.
I think I correctly remembered the varieties you named, if not I'm sure someone will correct me.

Thanks. I saw Butterfly in Regan Nursery today on sale for 50% off. Nicely shaped upright plant. It almost came home with me if not because of its size which is too big to fit into my car.
