Harvesting Sunflower Seeds

My husband planted about 8 sunflowers out in the garden earlier this season. They have grown to at least 10 feet! Now the heads have fallen over and there is some weight to them too. The backs of the heads are still green and the seeds have not changed color. They are still white and some still have little blooms. Now my question is ~ how much longer are they suppose to stay on the plant? When do I need to cut them off and wrap them in cheesecloth? Some have fallen over and they are starting to look pretty tired. Any suggestions are greatly appreciated since this is our first crop.
