Figs get to be rather large trees (30' is not uncommon), so I'm wondering why you think yours is too tall. I'd also question your reasons to keep this in a container, as the root run is being unnecessarily restricted and that could have a bearing on its fruit production.

Desert King is a recommended variety for this area, but fruit development depends on full sun and heat - something we don't get much of in summer. Locating the tree adjacent to a south facing wall where it will receive reflected heat should help. Unlike many other figs, it only bears a single crop of fruit in early fall that is produced on the previous season's growth, so any pruning should be done sparingly and immediately after harvest.
