There are many varieties of boxwood available; several locally. Illicium floridanum and I. henryi are evergreen, deer resistant and hardy here, but may be marginally hardy for you.

I'm lucky enough not to have much trouble with deer (I hope I haven't just jinxed myself), but I'm linking to a site that will let you search for plants by different characteristics including deer resistance. I know in general deer are less fond of aromatic platns such as Lindera benzoin (spicebush), but people say deer will eat these if hungry enough. The site is geared to Connecticut, but I'd guess at least 90% of the information holds for NJ.

I'll also mention that Euonymus alatus (burning bush) is an invasive plant in NJ, causing problems in natural areas. For you, or anyone else who might want to take this into account when gardening, the same website I'm linking to is very useful since it'll warn in red in the detail sections about plants invasive in Connecticut.

I think there are some sterile cultivars of euonymus/burning bush. Maybe try googling that--if you are he**bent on having it. There are so many beautiful things you can plant, even ones that deer won't like.
The way it is invasive is the birds eat the seeds & "plant" them all over, crowding out the native shrubs. Also, when it does get old enough to make seeds, you will find you are pulling a heck of a lot of little burning bushes out of your yard.
