Briefly

1. the colours are from anthocyanins and are quite normal though probably more purple than the picture suggests. See http://www.passionflow.co.uk/passiflora-passion-flower-pigments.htm and the racemosa link below for similar stipule colour.

2.Incarnata can be a bit messy and prone to virus problems or it could just be biting insects nibbling at the tips. Either way just leave it and hope. Incarnata will do best in full sun with very poor free-draining soil.

3. Racemosa can be very tempermental and some clones are very difficult to flower. It will like very high temperatures and full sun and very free draining sandy soil. It has waxy leaves which tells us that it lives with lower humidity than most Passiflora so keep it a bit dry.

The deformed leaves on your p. incarnata look like the new growth I get on many plants of mine at this time of year - the most deformed leaves of all are appearing on my orange and lemon trees. Every winter the bad looking leaves drop off, and when spring arrives and they start growing again, the leaves are all healthy until the next fall. So whatever virus yours has, it probably isn't a year-round thing, at least not here.
Where did you get your p. racemosa? Of all the passis I've seen in pictures, this is the one I've liked the most, but I can't find any mail-order nurseries on the internet that carry it - my local nurseries rarely ever carry even common passis, so they sure wouldn't have it!
