How to save roots?

We will be moving to TN but not until after the ground freezes here in NW Illinois. I have several Itoh peonies that I really want to take with me but wonder how to store them? Can they be stored in the refrigerator drawer for several months or can they just be stored in sawdust in a cool basement?
