PH level for my plants!!

I grow my Peppers in containers and they seem to do real well. I was wondering though what level to keep the PH in my containers at to promote the best growth and production. My peppers are setting at 6 what should I add to raise or lower the level? Another question is I have a red savina that is growing leaves and lots of blossoms but has two problems. First is the leaves have no size to them the largest leaf is about 2 inches long and a inch wide but a lot of leaves. Second the blossoms are falling off and not setting. My jalapanoes and a new red savina that I started from seed off the older plant are growing good and the leaves are huge and they are starting to bloom with no problems. I think it may have to large of a root ball on my old red savina plant (7 years old.) I repotted it into a larger pot which has plenty of room but wonder if I should cut the roots back because the are bound to tight together? Any Ideas? Any help on these questions would be greatly appreciated.
