the ones with rot should not be dried. open them up and cut away the mold. usually you will find a worm inside.

some peppers are for drying since they dry easy. cayenne is good for drying. it drys easy on a string if it is red. those that dry easy are usually ones with a thin flesh and a solid skin to keep out pathogens.

of course some people dry peppers by smoking them or heating them. this will work for those that do not want to dry easy on their own.

the new mexico type chiles. yours look like this type are usually dried out in the sun. however, commercial growers now use ovens to heat them. of course the sun can only be used in warm sunny dry low humidity weather. other people might choose to use a food dehydrator to dry them. but with New Mexico type I believe you are going to need an external source of heat. the sun is an external source.

I think the one on the right is a bit early for air drying. however, you might try sliting them open or in two halves to let the air reach the insides to see if they dry better and faster that way.
