slow ripening?

This is the first year I've grown peppers (or anything else for that matter). I planted seven varieties in containers. At this point they've all produced fruit except for the bhut jolokias, which I planted much later than the others. (Long story.) But so far only some of the the cayennes and hot bananas have changed color on the plant. I have lots of habaneros, Scotch bonnets, Anaheims and serranos that have been on the plants and seemingly at full size for weeks, but they don't seem to be changing color. Is this normal? How long should these peppers be taking to ripen? (I know the Anaheims are often picked green, but I was going to let them redden up.) Is there something I can do to encourage the process?
