Where in Texas and what size are they? If its southern or Central TX then you still have about 3 months of growing season.

I would remove all but the topmost leaves (maybe keep any within 6 inches of the tip), stabilize/stake it as best as you can, and water it well if its going to be in the back of a truck for a couple of days.

or you could wrap the plants with packing paper! That's what I do when I mail plants and want to save leaves!
