azzure: The reason you lost the heat in the Jalapenos wasn't from the roasting. It was from you removing the seeds and white pulp from the pepper. Next time you harvest a Jalapeno, cut it open, scrape out the pulp and seeds, then eat a piece of the green flesh. It will have a bit of heat but not a lot. Then, sort out some of the whitish pulp from the seeds or it it seeds and and all. You will find that that is where your heat went.
As for a cream cheese substitute? You might consider shredded Mozzerella cheese.

thanks Bruce I bought these from the store saved he seeds so I will plant some next year next time I will just leave the veins in. I must say that my 3year old got his hand up on the counter and took a top of a pepper and licked it before I could get it away he didn't cry but he said it made his mouth hot I guess I won't have to say don't put things on the counter in your mouth any more.

I just made a batch of poppers last night with Jaloro. It's a yellow jalapeno. A couple were mild like the typical jalapeno popper, but a couple were hot enough to feel the mouth and throat burn for several minutes after eating it. Not sure which variety of jalapeno you are growing, but I've also heard Biker Billy is hotter than most varieties. I'm growing it this year, but haven't tried one yet.

Or you could make habanero poppers. I'm pretty sure they'll be hot even without the placenta and seeds! Just sayin'.
