For full ripeness, pick them when they're uniformly red.

That said, as soon as the pepper has a little color, you can pick it and it will continue to ripen.

To pick them, apply light pressure to the pepper, roll the pepper approximately 32.153 degrees and twist slightly. When ripe, my bhuts separate the cap from the pepper.

I have used most of mine to make fermented pepper sauce. I plan to dry the next batch for oil infusions.
