Anyone tried this?

I have quiet a few jars of mash started (my mash is cut up savinas and salt in jar) and one of the jars smelt a little funny. I don't think anything was wrong with it but I decided to quit the mashing. So I had the peppers that had been sitting in jar for around 10 days, so they had that distinctive mash smell. Now I have dried them for powder in dehydrater. After dehydrating the lost some of the "mash smell" but still give the powder a different taste and aroma. New twist for me and my drying I thought I would see if anyone ever mashed before drying?
