Canning / Pickling

1st of all i'd like to start by sayin' hello...do to my love of chili's / peppers i decided to grow my own this year. i didn't do a full garden just wanted to get my feet wet so i now have 6 beautifal plants grown in buckets...Jalapeno, Habanero, Thai, Cherry Bomb, and a savory Habanero ( very little heat). i decided i wanted to save as much as i can for the winter mnths and had heard of canning and pickling. my 1st question is whats the difference between these? secondly i would like to store these whether it be canning, pickling or whatever by whatever means allows them to be as close to the freshness and crispiness that they are right now. I was originally told to freeze them. i tried that last year w/ Thai's a friend gave me.. i wasn't happy, the peppers seemed soft and mushy not at all as easy to use as they had been pror to freezing.
