pepper mash question

Hi, thanks in advance for any help!!

I wanted to make homemade peppermash so I took about 3/4 pound of red habs, added about 1 tablespoon of kosher salt to them and ran them through the blender for a few seconds to get a coarse chop. I stuck them into a pint jar and put more kosher salt on top, put plastic wrap on the top of the jar and sat it on the counter. After about 10 days it had a smell to it. Not a yeasty smell, almost a sour smell. The ph tested at 9 which seemed very high. (I am in qestion if the meter is working properly.) However I am wondering if after adding vinegar if this would be safe to eat, or should the ph be at 4.2 or lower and no vinegar is needed. I will probably be keeping this in the refridgerator. Does the ph matter if it is kept refridgerated?

I guess I am confused about the ph and when the ph should be tested and if ph matters if the end product is kept in the refridgerator. Does vinegar always have to be added? I note that comercial products have vinegar listed in the ingredients.

Any help is appreciated.

Thanks

Eight
