Hey Rick, I never knew what to do with cayenne, then one of the guys in our office started bringing back some bottled sauce that a geophysical company hands out at the meetings. That stuff is really good. So, I decided that I was going to start making sauce out of cayenne. Sad part, this year hasn't been very good for my cayennes, so, no sauce, but I had planned to pretty much imitate the recipe for tabasco.

I stopped growing them because of their limitations. They're fine for just powder and some heat, but that's about it for me. There's far too many other varieties that can bring the heat --- AND flavor.

I threw a couple in some hot carrots one time and though they added a bit more heat to the Japs, pulling one out and munching on it wasn't enjoyable-- too thick of skin and no flavor.

Matter of preference though -- some people LOVE Cayennes. I imagine freezing wouldn't be a problem though, except for the mushiness that accompanies frozen peppers. I'd treat them like a roaster though, because of the skin. Roast, peel skin, freeze.

About the only thing I've done with Cayenne is dry and crush for pepper flakes.

Not sure if you're a fan of vinegar based hot sauces like Frank's. If so, I posted some shots and recipe in a 2012 post. It's a few entries down from the top. Given the vinegar content it'll keep forever in the fridge.

You could be right Pam. The Bulgarian Spicy were a bit hotter than regular Cayennes.

Ok Bill, you got my interest piqued... what is Bulgarian Spicy? I've never heard of it... Boy, you are always throwing out names I've never heard of. I grow Bulgarian Carrot, not too impressed with that one - but it is purty..

Chop them into small pieces or run them through a food processor put a couple of cups into freezer bags and lay flat in the freezer then use them for what ever you want to do with them. Cayenne pepper jam isn't bad.
