overwintering peppers

Hi!

This is my first time trying to overwinter peppers. They are cayenne and (I think)serrano. I have a cafe that I can bring the plants inside. The temperature stays around 70 to 75 degrees in the winter. A very sunny spot in the window (where basil can flourish) Would the plants rather have a dormant winter (like in my home 59-65 degrees)or like to be warmer. All the "houseplant" thrive in the cafe a need to be watered often. My serrano has a hundred flower buds and I want them to bloom into chilis. I just dug it up this weekend. Cayenne, dug it up about a month agao. Any advice? Thanks, just found this forum!
