Red salvias

Does anyone know the name of the typical red salvia that is commonly sold in nurseries and garden shops? Is it S. splendens? Also, is this supposed to be a slow-growing plant? I have 6 of them and all they seem to want to do is bloom, bloom, bloom. But they don't grow. I even tried snipping off the blooms as they show up but this doesn't help. What am I doing wrong? I've never grown them before. Thanks.
