I usually just pluck the pod off because most of mine have ripe seed pods on the lower stem but still have a few blooms on the top. I don't like to cut the stems unless there is no chance of seeing more blooms.

Also, if you wait until the pods at the top of the stem are ripe, the lower pods will probably have already opened and your seeds will have gone astray. (As is the case in my garden right now!)
