They take awhile to mature. The pods (on both types of plant) will eventually dry and turn brown. The seeds should be very dark when mature. If they're white, they are not viable.

If I harvested the seed pods of (Aquatic) Blue Flag Iris, Yellow Flag Iris, Siberian Iris, and/or Marsh Marigold while they are still green, yet fully formed seed pods, will the (not yet black) white seeds inside the pods be able to germinate, if allowed to dry and the pod open up - on its own?

Will the seeds in the green pods be viable?

No,the seeds are not viable if they are white.Do not pick the pods when they are green but let them stay on the plant until the pod turns brown.Then seeds inside will then be black/dk.brown and then are viable.
