Harvesting seeds will be easy! The dried pods will start to open, revealing black mature seeds. There is a type of insect that bores into seeds and eats the innards, so be sure to sort out the ones with holes. I let my seeds get very dry, and then put them in the freezer to make sure all the bugs are dead! Also, if you put the seeds in a plastic bag in the sun for a short time, (10 minutes?) the heat is supposed to encourage the bugs to leave the seeds. I haven't tried this yet, though. I hope the idea of little insects hasn't put you off--you could always wait until the seeds have been mature a long time, in which case the larva has eaten its fill, developed, and left. Good luck!

I found that on the ones that had already dried and opened slightly the Yucca moths had already had their fill and left (which only left a few good seeds per pod).
