You will want to grow xeric sages, which are adapted to arid climates. These species will have gray leaves, bearing hairs of various sizes.some will be a fine farina, and others will have prominent hairs, This is to reflect excess light. Unless you have a shady microclimate and lots of water, don't try the succulent green, glossy subtropical forms.

Most of the xeric species come from southern California and neighboring states, South Africa, the Mediterranean and Mideast.

There are some high elevation Latin American sages that might work well, like S. darcyi, S. lineata, and S. cedrosensis (from Cedros Island off of Baja California, a desert island. S. melissodora from Copper Canyon in Mexico is another good one to try. That's the one in the image.
