I'm not sure if different grasses are different, but we just harvest the seed and immediately use it here with no problems. We hard rake the area to be planted, sprinkle the seeds, and cover lightly with the loosened soil. The big thing is to be sure to give them plenty of water for germination.

You can also dry them and use them at a later time.

If you let the grass grow up instead of mowing it, it will seed at the top.
