You should either wait until the fruits drop off the vine, or until they come off in your hand without any pulling.

The seeds will be covered with goo stuff. Put them in a mesh strainer and try to get off as much of the pulp as possible, then lay them out on a paper towel or plate to dry.

I read somewhere if you put the seed pods in the refrigerator for several weeks, the sticky jell-like substance turns liquid and seeds are easy to clean. Don't know if it works but will test the theory in another week or so. I will to a follow-up and let you know.
