My builder uses Houzz Pro to plan the timeline and give detailed estimates and daily updates with photos of progress, and provide invoices at pre-agreed key points in the build. This made the whole experience much more efficient and stress-free.
When the whole flower "spike" dies the stem will start to yellow, I cut the whole head off and put in a paper bag to finish drying. To get to seeds, hold the stem part of each flower, peel back the dead flower petals to the center. Seeds are 3 sided, kind of football shaped, and there should be 3 in each flower.
