They look absolutely normal. The seeds will be forming right now. Just be patient and you will see that every one of those disk florets will get a seed behind it. Google 'sunflower seed head' and you will see what it will look like. The seeds will be in exactly the same amazing pattern as the disk florets.

I recently learned that hybrid sunflower seeds specifically want the seed head to face down so the birds don't eat the seeds.
The seeds will form and as they mature, they may start to "fall out". Some people place a stocking or sack over the sunflower head to catch the seeds. Others just cut the head off the plant, hand harvest the seeds and let them dry completely before they store them.

Beautiful sunflowers @invisigoth, this year I am having a friendly sunflower competition with a friend and his kindergarten class. We have chosen to grow an heirloom the 'Mexican red torch sunflower'. This would be my first year growing a red variation and I am excited about what will happen.
