Nasturtiums have a rather pleasant peppery flavor in salads. Pansies are edible, but I've never eaten them. I've used them as decorations on food though. I've heard they are very good sugared.

Gumby, I am planting Borage for the first time. It has vivid blue flowers. The package suggests freezing them in ice cubes for lemonade. I have also read of using them to garnish soups, such as a zucchini soup, great floral contrast there. For Bronco fans, you could probably use it with a pumpkin soup if you could the guys to admit they like such things.

I also am planning on trying calendula flowers but I have to see if they still have them in the big city.

I have also heard borage can be added to salads and has a cucumber-like taste. I'm trying it for the first time this year too.

Another use for nasturtiums is to let them form their seed pods and pick them young. Soak them in a 10% salt water solution for 3 days, changing the solution each day. Then rinse them off and store in a jar with vinegar or a pickling mix. Then you have peppery capers. Tom
