we've planted tomatoes, peppers, lettuce, carrots, cucumbers, squash, eggplant, basil, broccolli, and soybeans! I prefer my herbs in pots so that I can move them inside for the winter. Also some tomatoes. We make our own compost (organic and even vegetarian!) and don't fertilize or use pesticides. I have actually had to pick and squish bugs off of my plants by hand but they only preferred certain ones so it was actually quite interesting. The eggplant and viney things and peppers didn't work so well but that could just be something I'm doing. This year I am saving more space by making a sort of lean-to over a ditch and growing the vines up a loosely woven fabric or plastic with holes in it so that the leaves get full sun and the fruit drops down underneath making it really easy to pick and less prone to slugs and disease. That will happen in April. The soil in our raised bed is the most amazing thing I've ever felt. We've been able to plant things more closely and grow huge amounts of goodies from only one raised bed.
