Once it's bolted, it's done. It's job now is to produce seed.

Plus, once most greens bolt, I understand that the leaves can turn bitter.

The first lettuce to bolt to seed is not the best one to save seeds from. The last one to bolt would give you better seeds, that would most likely be more bolt resistant.

If you still have some seed you can grow it now and harvest it this fall and it will have a nice ( less bitter )taste grown in the extended cool temps in the fall.
