I have a type of beatle eating my tomatoes. They started out looking like ladybugs but now have a large humped back. They are orange with black spots and are eating my plants. Luckily, they are slow eaters. They are about 1/4" long.

Sounds to me like Colorado Potato Beetle larvae. If you see beetles that have orange head and thorax with black spots and white and brown stripes on the wing covers it is definitely Colorado Potato Beetle. You may think they are slow eaters but as their numbers increase so will the rate of defoliation. They are resistant to many over the counter insecticides but I have used Sevin in the past and had pretty good luck. You mentioned you were organic so your only solution is to do as you are doing and remove them by hand or you might try bacillis thuringiensis. BT is most effective when the larvae are small. Another option is floating row covers which are a very light fabric that allows sun and moisture in but keeps bugs out. If you go with the manual method also look on the undersides of leaves for eggs laid in clusters and remove them before they hatch. If you have eggplant or potatoes in your garden you can expect a visit there also.
