The tuber that I am seeing is just a small one - but the roots are everywhere. I am not sure if trimming away the roots are going to hurt it - if there are small tubers inside of the mass of roots (the rootball is huge, about the size of the feed barrel it has been growing in - it took over. So - it's alot of digging around - I just don't want to damage it.
