First I'd give them time and maybe a little help to see if they would stand back up. Unless the limbs are broken, I think they might be able to be saved. Pantyhose can make good ties for something like this.

If that doesn't work, and the limbs are not ripped or severely damaged, I'd leave them until late winter and trim them then. The tree might be able to survive a severe pruning this time of year, but it would be much happier if you waited until it was not actively growing and until it was not having to deal with the stress of summer heat. Late winter is the best time to prune most deciduous trees and shrubs. If only a few limbs are damaged, they could safely be removed now.

I also have a rose if Sharon probably at least 10 feet tall which succumbed to a recent summer wind storm and they're hanging over. Tried straightening it carefully but no go. It apparently can't be done less you risk damaging the limbs. I've decided to let nature take its course. As with most species in nature, they're remarkably resilient. Come winter, if it hasn't bent back straight, I'll trim it down.
