Deer hate the taste and/or smell of Brugmansia, Datura, Amaryllis, and Ajuga, so they usually stay completely clear of them. However, they are particularly fond of Camellia. Camellia isn't poisonous to them, so you'll probably have to find some way to guard your Camellias against browsing.
