You might find some good info in the Fall Vegetable Garden Bulletin put out by the UT Ag Ext Office. I am attaching the link below. I don't know what types are better, but noticed they had some specific types recommended for fall planting (apparently different than their early spring choices). You might also look over the Guide to Cool-Season Vegetables at the site shown in the next paragraph.
