I am not an expert, but that's how it should be.
Just don't add orange; everything in the citrus family is not good for worms.

Oranges are fine in small amounts.

I wouldn't put it like that since depending on where one is located and season,additional moisture is required to prevent bin becoming too dry.
I do agree it's best having enough bedding to absorb moisture before drainage occurs. About the only time I don't have to spray water in Tx is when I am feeding melons. Then unless the melon is in half and sitting like a bowl to retain juice longer,the bins may leak moisture.
