If you can add some fresh compost daily and are sure to soak the water well before you begin, that should be fine. I find that when I start a worm bin, my worms are in shock for the first week or two anyway - being in a new environment and all - so by the time they get going you could well have 10 days worth of fresh compost to begin with. Sounds good. But I would be careful with too many coffee grounds. I would worry they would heat up too much. I dont drink coffee so that info is second hand. Hopefully someone else will answer who knows more about the grounds.

Bejay - will work fine - start with what you have with the paper wet as serena sez, and keep adding your kitchen scraps as you go - worms can live on shredded paper alone, and the coffee grounds won't be a problem, tho grounds on the surface will dry out quickly
