To red cedar tree trellis or not?

Hurricane Sandy took several Norway maples and left me with 2 red cedars, 4 ft apart, 35 - 40 ft tall, that have only a puff of green at the very top of the tree thanks to a life in shade. I've really considered removing these Dr. Suess-trees cos they are so unattractive, but I've been toying with using them as a trellis. They are pencil straight and now get lots of light. Can they be used for this purpose? Should the tops be cut off? My husband is pushing to grow hops there. I see it for Dutchman's pipe; would the two be friends? Better suggestionsâ¦..
