Zach, sounds like a cool idea. 8 cups per week = 1/2 gal. It depends on what the actual scraps are (tomatoes heavier than sprouts), but a rough guess would be about 1 lbs. of food.

If you really want to make a show of it, I'd start a single 18 gal. tote bin with 2 lbs. of worms (1 lbs. E. fetida + 1 lbs. E. hortensis). The EH are a more impressive looking worm. Cover the entire surface with a loose fitting cardboard sheet so you can remove it quickly to expose masses of worms.

A typical 18 gal. tote has ~2.5 ft2 of surface area and can easily house 4-5 lbs. of worms before reproductive rates slow down. 2 lbs. of worms in a well-established bin will easily consume 1 lbs. of scraps per week.

Unless the food is "hard" (carrots, broccoli stems, etc.), you probably don't even need to put them through a food processor. Lettuce and other leafy greens are especially quick to disappear. Be sure to have dry bedding (egg cartons, cardboard, coir) available to help control excess moisture.

You may also want to consider either a battery powered electric fence (scroll mid-page) or salted vaseline to keep the worms inside the bin.
