the Indore method wasn't worm composting but the beginnings of hot composting ... vermicomposting that volume of food waste would require some very knowledgeable management or major modern equipment

as someone who does a lot of food waste composting and has been involved with local govt compost education and the biosolids composting here, I'd suggest they find a source of wood waste to mix in [ground to coarse sawdust consistency] and hot compost it in windrows, simple and effective and easy to learn

Yes, I'm familiar with Indore, but I did not phrase that very well. Probably a big part of my communication problems with the BIL ;D

I talked to him again and it's not just hundreds of gallons, it's about 2000 gallons A DAY. I think some of it had been used as hog feed, but not enough to make a big difference.

Wood is scarce in the region he's in so that might be a problem. Bedding is probably the biggest issue. There's little or no industry, as they are out in the sticks.

Are there any good carbon sources? Waste paper, rice hulls, straw of any sort? You will need such a source to either make bedding or to mix and cover for hot composting.
Perhaps, if there is a real lack of such carbon sources, a digester might be a more appropriate use of the waste material.
