grapevine growing location

Does planting fruiting grapevines along a sunny south facing split rail 5 feet high 80 feet long fence seem to be a good idea if it is on a lot I own, which I never provide supplemental water?

I remember a lovely and abundantly fruitful grape vine climbing a barn type structure at my chilhood home where the soil was a very sandy loam. It was located in the USDA zone 6, and I never saw my parents give supplemental water to that mature grapevine.

From such a memory, I am now wondering if a variety of grapevine cultivars my the the perfect choice for me to plant along that fence, since the neighborhood restricts hedges being planted between properties for privacy.

It is reasonable for me to hope that such grapevines will establish and grow well with only seasonal rainfalls or other moisture providing events, with a slightly acidic silty loam soil?
