Dog-friendly bush

I'm looking to put some more shade somewhere over in my dog's mining operation. I've already planted a Silverado Sage bush and she has evidently decided that it does not need to be uprooted or defoliated, so I'm going to be a little more bold and put out a couple more bushes.

I'm looking to get something that is fairly fast growing, but not terribly wild looking (fairly neat form) or can be made that way with limited pruning/trimming. I would like some color and would like to go with purples and reds. And not toxic to the dog, of course.

I figured one would probably be a crepe myrtle, though I haven't decided which kind, yet. While drought tolerant is best, it can be a little thirsty as it's the area where I empty out and refresh the dog's wading pool each week.

I'd prefer something evergreen. Any ideas?
