You can use whatever kind of exposed supply trim you want, you don't have to get those from restoration hardware (in fact you may find that you can do much better on the price elsewhere). Ditto the trap (the exposed drain piece). You can get that anywhere also.

vintage tub also has sets of supply valves and p-traps (if you don't mind the more traditional look over the bottle trap they show there) which are pretty reasonably priced too.
