I would assume that there will be some blow-by of grease. I don't think any filter is going to be 100% effective.

There is probably a damper on the cap that would not operate in a sideways position. Maybe a deflector? mounted a foot or two away from the output as to not impeade the airflow.

The grill is a nice addition to the kitchen. We have the Wolf and like it. Have fun.

If possible have the duct exit the wall and turn up 90* and exit through the roof of the "Porte Cochere". This will solve all possible hazards, but be a trickier install.

I don't think you'll meet code mounting the blower or vent cab under a roof! Even if you're not having it inspected it's a bad idea.

Whether the hood system uses baffles or mesh filters, a significant portion of the grease particle size distribution is exhausted. I wouldn't want this settling on an old and decrepit car, much less one I cared about.

The only way around this that I've seen in the literature would require a _lot_ of UV radiated into the ducting to convert the grease to non-grease as it passed by the lamps. (I'm not sure whether all of the resulting chemicals would be OK for automotive paints, though.) A smooth 90-degree bend at the end of your duct plan with an exit through the car port roof is a more practical solution in most circumstances.
