1) Yes. I have the Max Burton portable unit, which I purchased for about $100. It works pretty well.
2) Induction units don't produce heat. They generate electromagnetic energy which causes the pan to produce heat. Generally, the 1800 watt units are quite satisfactory, and also the most powerful you can use on a 120V line. Yes, you can put them on a wooden table, the surface will only become as hot as the heat it receives from the pan. My portable unit produces enough energy to cook on its low range of settings...I can't imagine needing high.
3) I believe All-Clad brand SS pots work with induction, but not all SS will. You can test your pots with a magnet...if the magnet sticks to the bottom, they will work.

I got this tabletop induction cooktop. It's my "fifth" burner. I've used it a few times and like it. You will need cookware that will attract a magnet, you can get a few pieces that aren't too expensive. I don't know about All-Clad, I use my cast iron. I use mine on my granite counter, heat hasn't been a problem.

I have an oldish double burner electric hot plate that I used during my remodel, as did several of my neighbors. It was better than my old electric stove.

Good luck with your remodel.

I also have a Max Burton portable induction burner. Available at Amazon.com for under $75. It sits on a wooden cart and works with an All-clad stainless steel skillet. Will not work with the MC2 line (brushed aluminum exterior). Best of all, if something boils over, I can wipe it up immediately without burning myself.
