We considered a 27" hood, but ended up with a 24". We had the sheetmetal shop that did our stainless counters also do pieces to put in behind the hood and rangetop to bring them out farther to match the deeper counter.

I have a 27" deep hood. I think the extra depth is good as it increases the capture area. My range has the same power burners in all locations and I mostly use the front one, often at high power. I think the money spent on the hood was well worth it.

I have 30" countertops. Bumped range out to match. I covered area behind range and down about a foot with a piece of stainless.

27" hood. As long as I run hood on full and open a window opposite, when using the grill, everything is fine. If I forget, the smoke detector reminds me.

I also bumped the rangetop cabinet out 3", but went with a 24" range hood depth. I think it will be fine, as the burners and grill are located about 2 1/2" from the front edge of the rangetop. So I think it depends on the location of your actual burners. All my burners are same power, but if they were not, I would not want both of my power burners on the back, as it would be inconvenient for stir frying or making a roux.

However, if you are bumped out 4" and the front of your front burner is more than 24" out, I would definitely go with a 27" depth.
