I cook tomatoes and other acidic foods in my Calphalon copper, as well as my anodized Calphalon stuff, and have had no problems. I can't imagine why you can't cook anything in the Calphalon One. You can probably find out more on their website.

I would imagine the non-stick is more popular than the "regular" cookware, that's why there's more of the "regular" stuff in the outlet stores. A lot of stores will dump last year's stock, even if it's the same, to make room. It ends up at Marshalls.

I have Calphalon One Infused, (not non-stick). I have cooked tomato sauce and tomato based stews several times with no problem.

I took some cooking courses at the Calphalon Culinary Center and got to use many of the different types of cookware. It did not show signs of wear, but I did not know how old it was.

Calphalon's website care instructions and FAQs indicates more concern with alkalines (dishwasher detergent, baking soda) than acidic foods.

I would not want non-stick except in a few pieces like skillets. Non-stick saucepans... why? I find if the pan is preheated and oil or butter is added nothing sticks. Pancakes are tricky and the pan needs to be preheated just right. But everything else I have cooked releases or slides out no problem.

Let us know how you like the C1 stuff. I find it is intriguing cookware, easy to use, sears and releases really well, but it is not as carefree as SS (no dishwasher). I wonder how it compares to high quality SS for cooking ability and durability. Theoretically the higher conductivity of Al should make it better for searing and precise temp control.

I've had C1 for a couple years now and I love this stuff. I don't know if it's less popular than before but I can't imagine why it should be. I've noticed no wear, not even scratches from agressive cleaning, and it performs at least as well as my All-Clad. No problem with acidic foods.

The Calphalon One is infused with the same type of chemicals as the nonstick. It's a different process, but it's still a type of PTFE coating similar to the nonstick, just infused into the metal.
